1 15-ounce can chickpeas (or 1 ½ cups cooked), drained and rinsed
1 teaspoon olive oil
¼ teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon cayenne pepper (optional)
- Preheat oven to 400 F˚. Lay chickpeas out on either a paper towel or a tea towel and pat dry.
- Place chickpeas in a bowl. Drizzle olive oil on chickpeas and mix to coat. Sprinkle on the salt, garlic powder, onion powder and cayenne pepper (if using). Toss to coat and then place on a large rimmed baking sheet.
- Roast chickpeas for 30 minutes, and then gently roll the chickpeas around in the baking sheet. Roast for another 10-20 minutes, until lightly golden.
- Allow to cool (chickpeas will firm up as they cool) and store in an airtight container
