Penne with Eggplant

1 cup
1 cup of whole wheat penne or ziti (half of a 16-ounce package)
1½ tsp canola or olive oil
3 cups cubed eggplant
½ cup finely chopped onion
2 garlic cloves, minced
Salt and crushed red pepper
1½ cups pasta sauce
3 Tbsp finely chopped fresh basil


This eggplant pasta is flavor packed all the way! Let’s be real, all teens LOVE pasta and this recipe is the way to go when looking for a healthy tasty meal.

  1. Cook pasta according to package directions
  2. Heat oil in a large skillet over medium-high heat. Add eggplant and onion. Cook for 8 minutes or until the onion is browned.
  3. Stir in garlic and cook for 3 minutes.
  4. Add salt, crushed red pepper, and pasta sauce (and basil, if using). Bring to a simmer. Reduce heat, and cook for 5 minutes. Remove from heat.
  5. Toss eggplant mixture with pasta. Sprinkle it with cheese.
  6. Serve!
