Crispy Baked Okra

1/2 cup
1 lb. fresh okra, trimmed & sliced
1 egg
¼ cup low-fat milk or low-fat buttermilk
1 teaspoon hot sauce (optional)
1 cup cornmeal
½ teaspoon paprika
¼ teaspoon salt
½ teaspoon black pepper
2 seconds cooking spray


  • 1/3 cup non-fat mayonnaise
  • 1-2 green onions, chopped
  • 2 teaspoons lemon juice
  • Salt & pepper to taste


  1. Preheat oven to 425°F.  Whisk together egg, buttermilk, and hot sauce in a medium bowl.  Add okra and stir to coat well. 
  2. Combine cornmeal, paprika, salt and pepper in a large bowl.  Add wet okra 5-6 at a time and toss to coat well.
  3. Spray a baking sheet for 1 second with cooking spray.  Add coated okra in one layer on the baking sheet and spray again for 1 second with cooking spray.
  4. Bake 30-45 minutes until golden brown.
