½ cup Greek yogurt
1 frozen ripe banana
½ cup cooked beets, chopped into wedges
1 cup chopped pineapple
1 ½ cup unsweetened soy milk
- Layer ingredients in blender in the order listed. Pulse together until combined, adding more milk if necessary. Blend on high until smooth and creamy.
How to Prep & Cook Beets: Trim greens and root end.
- To cook on the stovetop: Place water and beets in a large pot. Cover and boil over high heat until tender. Peel beets with hands (wear gloves if you can because they will turn your hands pink!) or vegetable peeler.
- To cook in the microwave: Place in a glass baking dish, add water, and microwave on high for 8-10 minutes or until tender. Peel beets with hands (wear gloves if you can because they will turn your hands pink!) or vegetable peeler.
