½ tablespoon oil
1 small onion, diced
¼ teaspoon pepper
1 garlic clove, minced
6 cups reduced sodium chicken broth
½ tablespoon reduced sodium soy sauce
6 ounces cheese tortellini or other favorite variety
3 ounces (3 cups) baby spinach, roughly chopped
2 ounces (1 cup) parmesan cheese, grated
- Heat oil in large sauce pan over medium heat. Add onion, ¼ teaspoon pepper and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Add broth and soy sauce and bring to a boil over high heat. Stir in pasta and cook until tender or about 7-9 minutes. Turn off heat and stir in spinach and parmesan and serve.
