3 large grapefruit
3 navel oranges
12 ounces fresh baby spinach
2 Tbsp olive oil
½ cup thinly sliced almonds
Salt and pepper to taste
- Peel and slice grapefruit and oranges and place aside.
- In a large bowl add baby spinach: toss in fruit and almonds.
- Squeeze about 2-3 tablespoons of the juice from the orange and immerse with the olive oil.
- Drizzle with olive oil and season with salt & pepper, to taste
