Tempting Tostadas

Ingredients
4 baked toasts (tostadas) , 6-inches in size
½ cup Fat Free Refried Black Beans, canned
½ cup canned chicken, drained
½ cup Mexican blend cheese, low-fat, shredded
¼ cup low-fat/nonfat plain Greek yogurt
½ cup chopped lettuce
½ cup chopped tomato
½ avocado, sliced
Salsa sauce, as desired

PREPARATION

  • Preheat oven to 375 degrees F.
  • Drain the water from the canned chicken. Put the drained chicken in a bowl and mash with a fork. Warm canned black beans by placing beans into microwave-safe bowl, cover loosely and microwave on HIGH 3 minutes or until hot, stirring once during heating. Add a teaspoon of water at a time for smoother beans. Stir once more before serving.
  • While beans heat, place yogurt in a small bowl and add 1 teaspoon of water at a time. Stir until at desired drizzling consistency. Set aside.
  • Put your tostada on a plate. Spread 2 tablespoons of refried beans on each tostada and top with 2 tablespoons of chicken and 2 tablespoons of cheese.
  • Bake each tostada for 6-8 minutes or until cheese is melted.
  • Top each tostada with 2 tablespoons of lettuce, tomato, and avocado and 1 tablespoon of yogurt.
