Split Pea Soup with Greens

Ingredients
1 onion, chopped
1 tablespoon olive oil
3-4 cloves garlic minced
16-ounce bag dried yellow or green split pea, soaked 8-10 hours and drained
64 ounces (or more) low-salt vegetable broth
3-4 cups coarsely chopped kale (remove tough stems)
5 bay leaves
¼ cup red wine vinegar
1 teaspoon salt
1 teaspoon pepper

PREPARATION

  1. Sautè onion in oil for 2-3 minutes
  2. Add garlic and sauté 1 minute
  3. Add split peas, stock, kale, bay leaves and bring to a boil
  4. Reduce heat and simmer 45 minutes or until split peas are cooked
  5. Stir in vinegar, salt, pepper and serve
