Southwestern Tuna Salad

Ingredients
10-ounces canned tuna in water, drained
1 15-ounce can low sodium black beans, drained and rinsed
1 15-ounce can low sodium corn, drained and rinsed
1 cup red onion, diced (about ½ a large red onion)
1 pint grape or cherry tomatoes, quartered
½ cup cilantro, chopped

DRESSING INGREDIENTS

½ cup low-fat plain Greek yogurt

¼ cup fresh squeezed lime juice (about 3-4 limes)

2 tablespoons cilantro, finely chopped

1 chipotle pepper in adobo sauce, finely minced

1 teaspoon adobo sauce

1 clove garlic, minced

1 teaspoon cumin

1 teaspoon onion powder

½ teaspoon each of salt and pepper

PREPARATION

  1.  In a large bowl combine tuna, beans, corn, onion, tomatoes, and cilantro,
  2. Prepare dressing by adding all the ingredients to a jar. Close the lid and Shake vigorously to combine.
  3.  Pour dressing on the salad, mix until combined, and enjoy!
