Lentil Sloppy Joes

Ingredients
1 cup dried brown lentils, soaked
2 tablespoons olive oil
1 medium yellow onion, diced small
1 red bell pepper, diced small
2 cloves garlic, minced
2 tablespoons no-salt-added tomato paste
1 tablespoon chili powder
2 teaspoons smoked paprika
2 teaspoons ground cumin
2 teaspoons dried oregano
¼ teaspoon cayenne pepper (optional)
1 14.5-ounce fire-roasted, low-sodium diced tomatoes
1 teaspoon dried yellow mustard powder (optional)
2 tablespoons agave nectar or honey
Whole wheat buns or dinner rolls
2 tablespoon apple cider vinegar

PREPARATION

  1. Place soaked lentils in a small pot. Cover with 2 inches of water. Bring lentils to a boil, and then reduce to a simmer. Simmer with the lid cracked for about 35-40 minutes, or until lentils are tender enough to eat, but firm enough to hold their shape (not mushy).  Drain and set aside.
  2. Meanwhile, heat a large sauté pan over medium heat. Add onion and bell pepper. Cook, stirring frequently until onion is translucent, about 5 minutes. Add garlic and sauté for another minute.
  3. Add tomato paste, spices and cayenne pepper (if using). Cook, stirring constantly until spices and tomato paste are fragrant.
  4. Add vinegar, 1 cup water, crushed tomatoes and agave nectar (or honey). Use a wooden spoon to scrape up any bits from the bottom of the pan.  Bring to a boil.
  5. Reduce heat to medium low and let sauce simmer until it thickens, about 15 minutes.
  6. Add lentils to the pan with the sauce; stir well to combine. Toast hamburger buns in the oven, if desired. Ladle ½ cup of the lentil mixture on each toasted bun and serve.
