Fruity Crepes

Ingredients
1 large banana, mashed
2 eggs
¼ cup low-fat milk
½ teaspoon cinnamon
¼ cup all-purpose flour
1 teaspoon butter or cooking spray
1 ¼ cup mixed berries or other fruit for topping
Toppings
Optional Toppings: Maple syrup, honey, or powder sugar

PREPARATION

  1. Peel the banana and place in a medium bowl. Using a dinner fork, thoroughly mash the banana until no large lumps remain. Add the egg, milk, and cinnamon to the bowl and whisk until completely combined. Add the flour and continue mixing.
  2. Heat a lightly oiled large frying pan over medium high heat.
  3. Using a ¼ cup for each crepe, pour or scoop the batter onto the pan. Tilt the pan with a circular motion so that the batter coats the surface evenly, or use a ladle to lightly spread the batter.
  4. Cook the pancakes until the bottoms look browned and golden, about 3 minutes each. To prevent the crepe from tearing, only flip until it is fully cooked. Flip and cook for a 2-3 minutes or until completely cooked.  
  5. Repeat steps 2-4 with the rest of the batter. Serve warm. Try optional toppings like maple syrup, honey, or any extra toppings.
